Cinnamon Cookies


Ingredients

  • 1 cup white sugar
  • 1/2 cup butter, softened
  • 3 egg yolks
  • 2 tablespoons milk
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions

  1. Take a medium bowl. Add butter and sugar. Mix well.
  2. Beat the egg yolks well and add to the mixture.
  3. In another bowl, mix together flour, cinnamon, baking powder and salt. Add to the wet mixture. Stir well until the mixture is well blended.
  4. Wrap the dough, and set aside to chill for at least two hours.
  5. Preheat oven to 350 degrees F (175 degrees C).
  6. On a lightly floured surface, roll the dough out to 1/4 inch thickness.
  7. Using a 2 1/4 inch cookie cutter., cut out the cookies.
  8. Place cookies 1 inch apart onto a cookie sheet.
  9. Bake for 10 to 12 minutes in the preheated oven, until lightly browned.
  10. Set to cool.


Saltines Cookies


Ingredients:

  • 1 cup butter
  • 1 cup white sugar
  • Saltine crackers
  • 12 oz. chocolate chips
  • Chopped nuts

Directions:

  1. Prepare a cookie sheet by lining it with foil.
  2. Take a medium saucepan and melt the butter and sugar together on medium-high. Bring the mixture to a boil. Let boil for 3 minutes.
  3. Place a layer of the saltines on the foiled cookie sheet. Pour the sugar and butter mixture over the saltines. Spread it evenly with a spatula.
  4. Bake the cookies at 350 degrees F for about 12-15 minutes.
  5. Right when you bring the cookies out, spread the chocolate chips over the top and spread evenly once the chocolate melts.
  6. Top the chocolate with the chopped nuts.
  7. Allow to cool in the refrigerator.
  8. When cooled, break into medium pieces about the size of cookies.


Easter Chip Cookies


Ingredients:

  • 1 1/4 cup firmly-packed brown sugar
  • 3/4 cup golden crisco shortening
  • 2 tablespoons milk
  • 1 tablespoon vanilla
  • 1 egg
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 1/2 cup pastel-colored candy coated chocolate pieces

Directions:

  1. Pre-heat oven to 375F (190C).
  2. In a large bowl, combine brown sugar, shortening, milk and vanilla. Beat at medium speed of electric mixer until well blended.
  3. Beat the egg and add it to the creamed mixture.
  4. In a separate bowl, mix flour, salt and baking soda. Add to the creamed mixture. Stir at low speed till its well blended.
  5. Add candy-coated pieces or vanilla chips.
  6. Drop rounded tablespoonfuls (15 mL) of dough 3 inches (7 cm) apart onto an ungreased baking sheet.
  7. Bake one baking sheet at a time at 375F (190C) for 8 to 10 minutes for chewy cookies, or 11 to 13 minutes for crisp cookies.
  8. Cool for 2 minutes on baking sheet. Remove cookies to foil to cool completely.


Butter Icing for Sugar Cookies


Ingredients

  • 1 1/2 cups confectioners' sugar
  • 3 tablespoons butter, softened
  • 1 tablespoon vanilla extract
  • 1 tablespoon milk
  • 3 drops red food coloring
  • 1 (2.25 ounce) jar red decorator sugar

Directions

  1. Combine the sugar, butter, vanilla and milk. Beat until it is creamy.
  2. You may thin the mixture with a few more drops of milk if necessary to reach the desired consistency.
  3. Add the food coloring.
  4. Spread the frosting over cooled cookies and decorate with colored sugar, if desired.


Super Easy Sugar Cookies


Ingredients

  • 1/3 cup butter
  • 1/3 cup shortening
  • 2 cups flour
  • 1 egg
  • 1/2 cup sugar
  • 1 tablespoon milk
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 teaspoon vanilla
  • candy sprinkles or red colored sugar
  • raspberry or strawberry jam

Directions

  1. Beat together butter and shortening on medium speed for 1 minute.
  2. Add 1 cup of the flour, egg, sugar, milk, vanilla, baking powder, and salt. Beat until well mixed.
  3. Add the rest of the flour and beat well.
  4. Cover the dough and let it chill for a few hours.
  5. Lightly flour the counter top and roll out the dough so it is about 1/8 of an inch thick.
  6. Using a heart shaped cookie cutter, cut the cookies.
  7. Place the cookies on an ungreased cookie sheet and bake at 375F degrees for 6-8 minutes.
  8. Let cookies cool on racks.
  9. Spread jam on top of half the cookies, and top with another cookie to make little cookie sandwiches.
  10. Spread sprinkles or red colored sugar on top.
